Every Wednesday, Chef Joe takes a stroll through the Banff Farmers Market, hand-selecting the freshest seasonal produce and ingredients that inspire him. By Thursday at 4 PM, those finds become a market-driven menu—uniquely crafted for that day only.
From farm-fresh herbs to peak-season seafood and house-made pasta, each Market Thursday features a rotating selection of dishes that celebrate the best of what’s local and in season.
Expect something new each week — like marinated bay scallops, braised beef ravioli, or whipped ricotta crostini — with flavours that are bold, thoughtful, and distinctly Fat Ox.
Some dishes may stick around. Some might never return.
But all of them are worth a try.
