With the Winter Olympics beginning later this week, The Fat Ox is celebrating the Games—and the Paralympics that follow—with a thoughtfully curated set of Olympic features inspired by Northern Italy, the region that shapes our name, our menu, and our culinary philosophy.
For this moment, we’ve selected five total items across cocktails, wine, and food, each one representing one of the five Olympic rings. Together, they tell a story of Northern Italian winter flavours—rich, comforting, and rooted in place—while honouring the spirit of excellence, connection, and community that defines the Games.
Our cocktail features lean into classic Italian aperitivo culture with an alpine edge. The Garibaldi, a simple yet iconic combination of Campari and fresh orange juice, is bright, bitter, and timeless. Campari’s historic distillery sits just 20 kilometres from where the opening ceremony will take place, making it a fitting way to toast the start of the Games. For something bolder, The Ski Jump blends Marolo grappa, vodka, limoncello, maraschino liqueur, lemon juice, and basil—a layered, aromatic cocktail inspired by mountain evenings and après-ski ritual.
On the wine side, our selections spotlight Northern Italy at special Olympic pricing. By the glass, Fiol Prosecco from Treviso offers crisp bubbles and celebratory energy, while by the bottle, Paolo Conterno Langhe Nebbiolo DOC from Piemonte brings depth, structure, and elegance. These wine regions sit just a couple of hours from Milan, reinforcing the geographic connection between the Games and the flavours on our table.
At the heart of the menu is Peposo, a deeply comforting Tuscan-style stewed beef designed to warm both the heart and the belly on even the coldest winter day. Tender Alberta beef is slow-braised in generous amounts of red wine and rich veal stock, infused with deeply aromatic spices, and served over silky-smooth polenta finished with Parmigiano Reggiano.
In the same spirit of inclusion and community that defines both the Olympics and Paralympics, 15% of sales from these five featured cocktails, wines, and dishes during the Winter Olympics will be donated to Rocky Mountain Adaptive. This incredible organization creates and provides accessible outdoor adventures for individuals living with physical and/or neurodivergent challenges. Supporting their work allows us to celebrate not only craftsmanship and competition, but the belief that mountain experiences—and the joy they bring—should be accessible to all.
