Pasta La Feasta in Banff

This October, we’re celebrating National Pasta Month with a dish that hits close to home.

The Fat Ox is joining 17 of Calgary’s best restaurants for Pasta La Feasta, with $3 from every featured pasta sold donated to The Alex Community Food Centre.

Chef Joe’s dish is inspired by his Filipino-Canadian upbringing and the Italian influences that have shaped his culinary career. At the heart of it is longanisa — the sweet and spicy Filipino pork sausage he grew up eating and still loves today — paired with inspiration from one of the standout Italian dishes from his early years cooking at Bonterra Trattoria.

Made with fresh pasta from our friends at Canmore Pasta Co., Canadian cheddar and Alberta pork, this dish brings together Chef Joe’s past and present — Filipino roots, Italian technique and ingredients sourced entirely from Canada.
